Ingredients

for 5 portions
  • Lean beef mince800 g
  • Garlic cloves4 cloves
  • Low sodium soy sauce100 ml
  • Honey40 g
  • Peanut oil20 ml
  • Salt6 g
  • White pepper1.2 g
  • Jasmine rice300 g
  • Water500 ml
  • Broccoli1 each

Instructions

  1. 1

Rinse the jasmine rice until the water is mostly clear, then add it to a saucepan with the cold water and 0.25 tsp salt. Bring to a boil, cover, reduce the heat to low, and cook for 12 minutes; rest it off the heat for 4 minutes before fluffing.

  2. 2

Cut the broccoli into even florets, trim the stem, and slice the tender stem pieces thinly. Steam the broccoli for 4 to 5 minutes until bright and just tender, then leave it uncovered so it does not overcook.

  3. 3

Grate the garlic into a bowl, then whisk in the soy sauce, honey, and white pepper until the honey loosens into a pourable sauce.

  4. 4

Heat the peanut oil in a large skillet or wok over medium-high heat. Add the beef mince with the remaining 0.75 tsp salt, let it brown briefly before stirring, then break it up and cook until no pink remains and the edges pick up color.

  5. 5

Pour the garlic-soy sauce over the beef, add the steamed broccoli, and toss for about 2 minutes until the sauce tightens into a shiny coating around the mince and vegetables.

  6. 6

Portion the rice for meal prep, then portion the sticky beef and broccoli alongside it. Let the portions vent until the steam settles before sealing.

Store and reheat

Refrigerate sealed portions for up to 4 days. Microwave each bowl loosely covered for 2 to 3 minutes, stirring the beef once, until hot throughout; add a splash of water near the rice if it feels dry. Freeze portions for up to 2 months, thaw overnight in the fridge, and reheat gently so the broccoli stays intact.
